My New Favorite Cookie

Hershey's Chocolate Chips Thumbprint Cookies
makes 2 1/2 dozen

1 cup chocolate chips--I used dark chocolate
1/2 cup sugar
1/4 cup butter flavor shortening
1/4 cup butter, softened
1 egg, separated
1/2 tsp. vanilla
1 cup flour
1/4 tsp. salt
1 cup finely chopped nuts--I used walnuts and almonds

(If you really want to behold something spectacular...click on the cookie for a close-up. It's magnificent. I could look at it all day.)

-Oven to 350.

-Melt 1/4 cup of the chocolate in small bowl either in microwave or double-boiler; set aside to cool slightly.

-Combine sugar, shortening, butter, reserved melted chocolate, egg
yolk, and vanilla; beat until well blended.

-Stir in flour and salt.

-Shape into one inch balls.

-With fork, slightly beat egg white in small bowl.

-Dip each cookie ball into egg white and then roll in nuts to coat.

-Place 1 inch apart on lightly greased cookie sheet--
parchment paper is
easier.

-Press center of each cookie with thumb to make an indention.

-Bake 10-17 minutes til set--don't over bake! The actual recipe say it only takes 10 to 12 minutes to set, but in my oven at my altitude, it took about 17...Give or take.

-Remove from oven and immediately place about 5 chocolate chips in thumbprint of each cookie; after several minutes, swirl melted chocolate chips with a toothpick.

-EAT!..best when warm...if you ask me. If you can't eat them all while they're still warm, microwave them for a few seconds when you get to 'em.

I'm inlove with this cookie. I get a deep inner stirring of joy when I eat them.

If I become a cookie in my next life, I will find one of these cookies to wed.

  4. How dare you suggest removing the nuts. The nuts hold the cookie together, after all. They're the aggregate in the dough.

    Honestly though, I think I'd prefer some other nut than the walnut. The walnut has a strange texture to me. Almonds, surely, and maybe cashews? Or chopped peanuts. Honey roasted Cornuts?

  5. You can't take the nuts away! Without them, the cookies are sad and lonely and...nutless.

    However, I have devised a revision. If you are allergic to nuts, (which, in my opinion, is the ONLY reason to omit them), you could roll them in sprinkles or crushed up Andes. OOOO!!!!!!!
    ...OR...I just got totally awesome idea...you can roll them in crushed up candy canes for Christmas! YES! I'm brilliant. (But don't roll them in egg white first or you'll have a big mess.

    Peanuts and cashews would be good, Dan.

  6. Yum! Those look scrumptions. I'm always looking for a good cookie recipe. I always revert to choc. chip it seems.

    PS-Dark choc is nasty. I'll stick with regular choc chips :)

  7. Oh Amy! I know we are kindred spirits! Dark Chocolate is the reason for my existence... most days. Dan, I prefer hazelnuts. Everyday. I shall be trying these Amy Loo! Don't make me come up to Utah and do a photo shoot with you!!
