Grasshopper Ice Cream Sandwiches


1 chocolate cake mix
2 eggs
1/2 cup butter, softened
1 cup green mint chips or mini M&Ms
1 container mint chocolate chip ice cream


-Preheat oven to 350.
-Mix cake mix, eggs, and butter together in large bowl. The dough will be stiff.
-Mix in chips or M&Ms.
-Use cookie scoop to drop dough onto ungreased cookie sheet.
-Bake 8-12 minutes...take them out while they're a little underdone. Let cool on sheet for 2-3 minutes. Remove from pan and place on rack.
-Cool completely and put a big scoop of ice cream in between two cookies.

You can use any cake mix, any mix-ins, (chocolate chips, nuts, M&M's, or any other candy), and any ice cream you want.

These are really good and easy.

  7. You should never eat ice cream and cookie cake sandwiches in the dark. It's like how drinking alone always leads to alcoholism.

    Next thing you know, Steve's catching you sitting on a bucket of detergent in the laundry room at three in the morning with the lights off, a tub full'a Chunky Monkey in your ice cream-slicked hands and half a chocolate chip cake covered in Hershey's syrup on the washer alongside a gallon jug of milk with cake crumbs floating at the top.

    See, if you do it in the light of day with company, it's a party. You can always say your celebrating National Inventor's Month, or the Democratic National Convention or whatever.

    Works better that way.
